I grani di Atlantide® has been a point of reference in the Sardinian wheat supply chain since 2017, producing and selling Sardinian flour, carasau bread, artisan pasta and tasty biscuits. All are authentic and high quality products. But above all these products are obtained from the cultivation of einkorn wheat, one of the oldest and healthiest grains ever. To cultivate this grain is to cultivate a dream, that of producing healthy food, as it used to be done, in the most sustainable way. This is Lorenzo's dream, which came true thanks to dogged commitment, a lot of study, a lot of hard work and a lot of love.
Lorenzo Moi is originally from Padua, where he studied Agricultural Sciences. He arrived in Sardinia in the 90s with his parents, as a simple tourist, and fell in love with the beauties of the island. In Orosei, in 2012, he participated in a day dedicated to wheat.
It all came about almost by chance - thanks to this occasion he discovered einkorn wheat and fell in love with this ancient low-gluten wheat variety. He stayed in contact with the speaker of the event, a researcher from CREA (the Council for Agricultural Research and the Analysis of Agricultural Economics). This experience helped him when drafting his degree thesis, published in 2014, on the einkorn grain supply chain in Sardinia.
This is how adventure is born, this is how a dream comes true. Indeed, a short time later, Lorenzo bought his first machinery: a small stone mill in Orosei and a machine for cleaning the grain. Today his company produces:
organic Sardinian einkorn wheat flour
durum wheat semolina
einkorn wheat biscuits
carasau bread produced with einkorn wheat
typical Sardinian pasta such as malloreddus and fregola made with einkorn wheat
The Mulino Rubino store, located in Orosei, was opened in 2019. Lorenzo Moi works as both farmer (cultivating several hectares of wheat) and miller, producing and milling einkorn wheat. He also mills common wheat, durum wheat and barley flours. He uses strictly Sardinian raw materials only, grown without the use of herbicides.
Einkorn wheat is authentic, tasty, nutritious and digestible. It is an ancient wheat variety with a low gluten content.
Thanks to its low gluten content, it does not rise a great deal, but it is rich in nutrients, as well as being very digestible. It is a rustic wheat variety, suitable for organic cultivation, with low environmental impact.

What makes the project unique is its direct relationship with its ambassadors of flavour. Lorenzo uses social media channels to document the day-to-day of Mulino Rubino, and train those who follow him on issues of interest, such as production, the supply chain, the environment and corporate social responsibility.
